What is a canelé?
A french pastry from Bordeaux with a unique dual texture: crispy, caramelized on the outside & soft, custardy on the inside. These one-of-a-kind pastries are the reason Nicole became a baker.
What are canelés made from?
Milk, eggs, butter, sugar, flour, Madagascan vanilla, rum.
Where do canelés come from?
Canelés originate from the 15th century in Bordeaux, France (in the south). Local wine makers used egg whites to purify wine and gave the leftover yolks to the nuns who came up with these. Who knows where they got the rum!
How do you make a canelé?
The batter takes two days to make as there is very little flour used, the gluten needs time to develop, and the vanilla and rum need time to infuse into the mixture. Traditionally made in copper moulds, ours are baked in silicone moulds with special techniques to preserve the crispy exterior.
Where are you located?
We are proud to be a Canadian owned and operated business in Vancouver, British Columbia. Our retail location is currently at the world-famous Granville Island Public Market, kiosk 150 in the food court area. Our production kitchen is located just up the road at 1605 West 5th Ave in Kitsilano.
Do you have your donuts / beignets available today?
Our beignets are available on Fridays, Saturdays, and Sundays from around 12:00PM until sold out. We accept pre-orders that can be picked up on one of these days. If you’d like donuts / beignets for an event, you can order a minimum of 40 donuts / beignets on any day of your choosing.

What is a dacquoise?
A gluten-free, meringue-based pastry made from egg whites, almond flour, and sugar.
Do you use nuts in your products?
For any allergy related concerns, we do use pistachios, hazelnuts, and almonds in some of our other products. We also work out of a shared kitchen facility. We cannot guarantee there is no cross contamination.
Is Granville Island your only location?
Granville Island is currently our main retail location. For large order pick ups or pre-orders, you can also request pick up at our production kitchen location near West 5th and Fir.
Do we ship/ mail our baked goods?

Is there any cinnamon in a canelé?
Although the word “canelé” is similar to “canela” in Spanish and Portuguese, or “cannelle” in French, there is no cinnamon in traditional canelés.
